Deliciously sweet “lalangites”: DIY traditional recipe...the Papigo way
“Lalangites” are traditional pastry sweets that we come across in Papigo village in the North of Greece. It is an all-time favourite snack throughout the day and not just for breakfast...Try them out on Christmas Eve as an alternative dessert!
In the old days there were more than one ways to cook them, like for an example over a natural flame of burning wood or in large baking trays over the ash of burning charcoal.
We share with you the traditional recipe for “Lalangites” which you can make and taste at home before trying out the real thing during your next trip to the beautiful village complex of Zagorohoria up north.
Ingredients:
1 sachet of dry yeast
½ mug of lukewarm milk
500 grams of flour
a teaspoon of sugar
4 spoonfuls of melted butter
oil for frying
walnuts, sugar and cinnamon for the topping
Execution:
Dissolve the yeast in the mug of milk. Sift the flour into a bowl and slowly pour the milk with the yeast while mashing the mixture together into a soft dough which, however, shouldn’t be runny like the one you usually make for donuts.
Cover the bowl and bake in the oven at about 30 to 40 C° for almost 2 hours.
This dough should then be ready to take into portions and lay flat within boiling hot oil in the frying pan. When golden crispy, serve in a large dish topped with plenty of sugar, walnuts and cinnamon.
